If you love Asian flavors and you love mandarin, then the following recipe for a mandarin salad will become one of your favorites. It only takes 20 minutes to prepare and it is ideal for lunch or dinner for the entire family. If you share this recipe with your friends, they will be grateful!
Recipes: Mandarin salad (Serves 4 people)
Ingredients (for the dressing)
1/2 cup of virgin olive oil
3 tablespoons of brown sugar
1 tablespoon of cider vinegar
1 tablespoon of chopped parsley
2 bay leaves
2 tablespoons of red pepper sauce
Ingredients (for the salad)
1 small head of lettuce, chopped
2 celery sticks,chopped
2 chopped onions
2 tablespoons of garlic powder
1 can of drained, mandarin orange segments
Ingredients (for the almonds and the nuts)
1/2 cup of sliced almonds
1/2 cup of nuts
2 tablespoons of honey
1 teaspoon of cinnamon
Cook the almonds, the nuts, the honey and the cinnamon in a saucepan over medium heat for 5 minutes, until the honey is melted and until the almonds and the nuts are coated. Let them cool for 6-7 minutes and then gently, break them apart. Add all the ingredients for the dressing (the virgin olive oil, the brown sugar, the cider vinegar, the chopped parsley, the bay leaves and the red pepper sauce) in a container. Stir them all well for 2 minutes and then put them in the fridge.
In a big bowl, add the chopped lettuce, the celery sticks, the chopped onions, the garlic powder and the mandarin orange segments and stir them well for half a minute. Take the dressing from the fridge and spray the salad with it. Last, but not least, add the almonds and the nuts.
Serve immediately. This salad can be kept in the fridge for a day or two and still be delicious.
